Re: breakfast
In this period I'm drinking fresh milk, a cup of black hot cawfee, chocolate and cereal cookies.

I don't eat breakfast. When I do it's something simple like toast.

explain to me the various grades of syrup, because i don't think i've ever once seen anything besides A. i am assuming B and other subsequent syrup-grades are only available in the state of vermont or something or maybe i am just not looking hard enough

They are ranked by color. The B is the darker, more rich stuff. Wikipedia: Maple Syrup Grades The color outcome depends on where and when in the season the sap is collected. I'm not sure if B gets exported much because the lighter stuff (Grade A) is a bigger seller. There's a running joke around the state (and likely in most sugaring communities) that this is because the 'flatlanders' think Grade A is a quality level; we keep the good shit. It could be that or it could be that the lighter stuff is just more commercially viable being the more mild. I can't say for sure.
I agree about expensive though. This year it is quite a bit more than last year even. The sap flowed very well this year and was in abundance but price increases were mostly due to many many tap lines being damaged from ice storms we had over last winter. A lot of equipment needed to be replaced. It helps if you know people who do it.
Also, there are people scattered around the state who slow cook a ham over the period of a week in their boiling tanks in the sap. No meat juices leave the ham but sap gets into the meat. Holy fuck is that the best ham Ive ever had in my life.

Re: breakfast
i don't usually have time for breakfast, so i grab a cereal bar on my way to work. to make up for it, i make breakfast for dinner once a week consisting of pancakes/waffles, sausage/bacon, and eggs/omlettes. good stuff!

if you're cooking for a few people then it's not a big deal, plus they can help cook and clean.
making it for just yourself though, even in small portions is just though.
