So I've gone and tried a lot of things on the smoker.

Pulled pork
Sausages/hot dogs
Leg of lamb
Brisket
Whole chickens
Queso
Burgers
Pork loin

I've got a good idea of what I'd like to do to change some things. The bark on the pulled pork was a bit too hard, I'll probably pull it and wrap it in paper when the temp stalls out. Pork loin got a bit dry on me so I'm planning on doing a bacon wrapped one next.

As for the brisket I wanna try a whole packer instead of just a flat, and for the chicken I'm gonna spatchcock that son of a bitch.

Tried burgers for the first time tonight, and holy shit they turned out good

. Did them at 225 for an hour, then into a screaming hot pan to sear the outside and melt the cheese.

My dad just smoked a huge tri tip, 2 whole chickens, and a rack of ribs last night. He brought some to us I think hes trying to feed the whole neighborhood.

I'm not a huge fan of ribs so I haven't attempted to make any of those yet. Tri tip is very much on my to do list just haven't been able to pick one up at the right quality/price combo

You have to do tri tip, it takes on the smoke flavor best of anything.

Im with you on the ribs I am not a huge fan either, too fatty. My brother loves them though so my dad bribgs him iver a few when he makes them.
