I guess for health reasons, some folk may need to do this whether they like it or not. Practicality? I would say that's a regional thing depending on how much produce would typically cost in one's area.

I am not a vegan or a vegetarian by any stretch of the imagination but I will say from what I've had, the quantity and quality of the selections out there has improved dramatically over the past decade.
probably worth consulting with a nutritionist if you want to get serious about it
at the very least you'll need to be taking a vitamin B12 supplement (it's mostly found in meat and meat by-products)

As a chronic migraine sufferer ive been prescribed vegan a few times. Keep in mind I live in California so its always been super easy you can buy anything you need quite easily. I just get tired of beans, beans and more beans and find it not practical cooking two dinners every night since nobody else is going to do it. I find any restrictive diet to be impractical long term as well.
B12 depends a lot if the foods i bought were fortified and i was able to get my needs throughout the week with a single weekly supplement. I just found it to not work for migrains and cooking two different meals to be obnoxious. Def not expensive like gluten free just a lot of prep work and planning as with any special diet.
I do not suggest a nutritionist I find their information to be quite outdated. It might be useful if it us covered and you are completely ignorant to everything diet and nutrition wise.

Do it Erny Meat is murder, the pigs and cows will love you. If you worry about your own health, it is like Mesarthim and Noyka say. Lots of choice in meat replacement products and much of it is B12 fortified. Dairy is torture too but we can be vegetarian with vegan days. Full vegan is a nice goal but you can take steps.
Animal farming is taxing on the environment too, lots of land use, water use and release of co2. The numbers are shocking when you delve into that. And is it ethical to stuff ourselves with meat when many still live on a cup of rice a day. A question for a commie rebel like yourself
The reward is Cattle Decapitation will be so much better

I am not interested in going "vegan" (avoiding all animal products). I am not even actually interested in going completely 100% vegetarian. I'm considering the habit and routine of mostly consuming vegetables with very occasional allowances for meat consumption. This is purely for health reasons and is one of the topics I discussed on the Getting Old thread.
My questions would be: what are good, tasty, staple meals that can conveniently be cooked on a routine basis to form such a habit? I obviously know some recipes from the south asian culture, but thought I'd ask here if there are some simple, easy meals to cook.

i have been rocking avocado toast for dinner this week. it is about as foolproof as it gets. i just get a nice loaf of bread and a bunch of avocados. mash one of those fuckers up, toss in a bit of salt, pepper, garlic, anything else you like. drizzle a bit of olive oil on your toast, spread, top with some red pepper flakes. if you like a bit of heat, this stuff is incredible on it
lunch i pretty much always do smoothies nowadays. almond milk, baby kale/spinach, plain yogurt, frozen fruits of choice, a bit of protein powder; this is what i am rocking at the moment
when i am at home i eat plain unsweetened muesli for breakfast most of the time, mix of all the main grains (including plenty of rye ) and then if i have any, slice up a fresh banana, with cawfee
i switched a while back to only cooking brown rice at home. it's tough though cos my wife does not like it, she only eats white rice. and the in-laws only cook white rice. so i am the weird one being difficult
in terms of meals that don't need meat, fuck, there's 1,000s. my most commonly consumed one would be pizza. i always have dough on the go and like cooking pizzas for guests and my 3-yr-old niece. she gets pizza and popcorn by default. pizza is fucking easy when you get the hang of it. and it gives you some time for podcasts while you're working the dough.
i mean, what else to say. substituting jackfruit, tempe, tofu, into meat dishes nearly always works. you're from balochistan so you don't need any help with routine, freezable, super cheap food.
i think that would work just fine, i just don't really buy eggs because then i have to get through a dozen of them by myself. that's a lotta cholesterol

You can keep eggs for quite a long time and are super healthy for you (if sourced right). Ths cholesterol being bad for you is another lie that we were made to believe. Like so many other things when it comes to nutrition and the environment.

i mean i don't strictly avoid cholesterol or even eggs really, but i do remain semi-conscious about going overboard on it just due to family history. that is just a huge quantity compressed into a relatively small timeframe if i'm indulging at home. so it's typically more of a dining out type of deal for me
