Skinning of a 'bayawak' (water monitor lizard) for lunch...

Some natives from an island further south of Manila. I'm not sure if this is 'daily fare' for them but the skinner seems as if he's done this one too many times. They cook it 'adobo' style (with vinegar and soy sauce) or with coconut milk and chili.

I'm from the from the Northern lands of the Philippines. My uncle and I used to hunt this kind of lizard before back in my high school days. And I got to tell you, this taste like chicken.
